No letter: - No letter: Stands for Alpha, which is the most unstable channel. It will most likely have bugs or major missing features. - No letter: Stands for Beta, which is a testing channel. It may have bugs or minor missing features. - No letter: Stable. This is the channel that I recommend playing on, as it has been tested and has all of the features.
The only time you should use Beta or Beta builds is when you need to play on that version, and even then, please report any and all bugs you find.
